Ingredients:
- 1 package (16 ounces) of packaged spinach or baby spinach

- 2 cups sliced pepperoni, drained of fat (or mushrooms if you prefer)
- 1 pound sliced salami, drained of fat
- 8 slices Swiss cheese, cut into quarters
- 3 tablespoons Parmesan cheese shavings or Parmesan cheese grated (or 1 cup of packed shredded Parmesan cheese)
- 2 Roma tomatoes, sliced thin
- 2 tablespoons roasted red bell pepper, diced fine, or 1 can of roasted red bell peppers with juice to equal 2 tablespoons. You can also use 2 cups of chopped fresh tomatoes.
- 2 cups of croutons, Crouton Crispies, are preferred, but you can use whatever you prefer
- 1/4 cup kalamata olives, sliced in half. (You can use black olives instead)
- 1/4 cup banana peppers, sliced thin
- 1/4 cup thinly sliced onion
- 1/4 cup roast mushrooms (Can be used as fresh mushrooms, but if fresh, the cooking time will be longer)
- 6 strips of bacon, cooked until crispy and chopped into small pieces. You can also use ham or chicken in this salad recipe, but it is not recommended because of the meaty texture ham will add to the salad.
- 2 tablespoons Caesar dressing or very thin you can use Greek yogurt.
Preparation:
- Preheat oven to 350 degrees and cook 1/4 pound of bacon until crisp; drain excess grease and set aside on paper towels.
- Cut the mushrooms in half and set them aside.
- Clean the oven rack and place a baking sheet on top of the rack(to catch any drips from the bacon).
- Rinse all vegetables (spinach, romaine lettuce, banana peppers, etc.) in cold water and pat dry with paper towels.
- Put them into a large mixing bowl with the remaining ingredients, and mix well with your hands to combine everything together. You can use your hands or a large salad bowl to mix everything together.
- Lay out the ingredients on a large baking sheet (no separator between the ingredients).
- Bake at 350 degrees until all of the vegetables are cooked thoroughly. This can take 15-20 minutes.
- You can make this ahead of time, put it in the refrigerator to hold, and re-heat it when ready to serve. When serving, toss the salad until mixed well again, and dress with your favorite Caesar dressing or Greek yogurt dressing. Re-heat before serving if using a refrigerated salad.
- This salad can be served cold or at room temperature, but people prefer to serve it at room temperature.
