Samin Nosrat Roasted Vegetable Salad Recipe
Ingredients:
- 1/3 cup of sweet potatoes, cut into 1-inch cubes
- 1/3 cup of parsnips, cut into 1-inch cubes
- 1/4 cup of peeled and trimmed carrots, cut into 1-inch cubes
- 3 tablespoons of extra virgin olive oil
- Concentrated apple cider vinegar
- Salt and pepper to taste
Directions:
- Preheat the oven to 400 degrees F. Line a sheet pan with parchment paper or aluminum foil and spray with cooking spray or oil.
- Place all the vegetables on the sheet pan, and drizzle with olive oil, salt, and pepper. Roast for about 30 minutes or until soft.
- Meanwhile, prepare the dressing by combining apple cider vinegar and a pinch of salt in a small bowl
- Place all of the roasted vegetables in a large bowl and divide them into two parts – salad and salad dressing
- Place the salad dressing into a glass jar with a lid and chill in the refrigerator for 30 minutes
- Pour the salad dressing over the salad and garnish with apple slices, dried cranberries, or chopped almonds – whatever is your favorite
